Chicken Pesto Bake Meal Prep 👨‍🍳 This single serve glass bowl meal prep is such a good idea and I can’t believe how easy it was! I highly recommend you give it a go 🤤 Ingredients (for one serve): 50g x raw basmati rice 150g x lean boneless chicken breast (diced) 15g x pesto (Barilla - vegan basilico) 30g x High protein plain yoghurt (Woolworths) 100ml x chicken stock 15g x shredded mozzarella 1u002F4 cup x frozen peas 6-8 x cherry tomatoes Salt and pepper Method: Preheat oven to 180degrees. In a glass meal prep container add your rice, chicken, pesto, yoghurt and then the stock. Mix until well combined. Top with frozen peas, tomatoes and finally the cheese. Season with salt & pepper and then bake in the oven for 30-40 minutes until cooked. Let cool and store in the fridge! Enjoy 🙌🏼 Calories: 485 Protein: 46g
